Forged by hand, his knives in damascened steel and horn handles tell the story of an ancestral know-how, inherited from his grandfather.Jean-François Agostini, a member of the syndicat des couteliers corses, holds the "Capu-artisgianu" quality label, certifying craftsmanship entirely made in Corsica, with good to very good quality production. He holds a Fêvre-taillandier-coutelier diploma from Christian Moretti.
The knives are unique pieces, forged and assembled by hand in the small village of Costa in Balagne. These knives bear the mark of the Corsican cutlers' union, certifying the origin and quality of their creations.
Every man has a story, every knife has a story. Metal, horn, forge. These few images tell the story of my knives, a story that began a long time ago with my grandfather, some of whose knives I still have.
I mainly make knives in laminated steel with a damascus look. These ribbed blades are obtained by forging a stack of different steels. The blade is then forged with a hammer and anvil. Handles are made from goat, billy goat or ram horn.
